                                                                            Bitter taste, in the history of food, was regarded as an indication of unsafe or poisonous food. Most of the bitters are unpleasant though, there are some very pleasant and delectable bitter foods, Dark Chocolate being perhaps the foremost among them. The very etymology of chocolate is interesting in that it has been derived from Xocolatol; meaning bitter. Xocolate was the bitter extract of Cocoa pod, first used by Aztec tribes of Mexico.
